1 cup Salted Butter
55g Powdered Sugar
2 cups All-Purpose Flour
30g Cornstarch
Filling:
1/2cup CRISCO Shortening
2 cups Powdered Sugar
3 tbsp Fresh Milk
2 tsp McCormick Vanilla Extract
8 tbsp Clara Olé Jams flavor of your choice (strawberry, blueberry, orange marmalade, mango, pineapple)

Preheat oven to 375 F. Prepare sheet pans by placing a silicone mat or parchment paper on top.

Cream butter and powdered sugar until light and fluffy.

Combine flour and cornstarch and add to the creaming mixture. Beat until well blended.

Place cookie dough on a floured table. Roll out the dough gently, 1/8 inch thick and cut into small discs. Place them on prepared sheet pan.

OR You can roll the dough into a log and place in the freezer. Thaw out a bit and cut into discs. Then place on sheet pan and bake. Let cookies cool to room temperature.

Bake for 10 to 15 minutes until golden brown.

While baking , prepare the filling:

a) cream shortening and add in the vanilla.
b) Add in the powdered sugar
c) Add in the milk.
d) Fold in the jam.
e) Place this in a piping bag with star tip.

Pair the cookies and place side by side. Then make one piece flat side up and the other flat side down. Pipe filling on top of the flat side up. Then top with its partner.

Repeat with remaining pieces.

Place pieces on white paper cupcake liners and you can place them in a box or a microwavable container or in a tin can.

You can change the shape if you want depending on the season. You can make squares, diamonds, ovals, etc.
