GUAVA CAKE
INGREDIENTS
CAKE
184g cake flour
12g baking powder
2g McCormick Iodized Salt
108g egg yolks
279g egg whites
250g granulated sugar
2g McCormick Cream of Tartar
176g Clara Olé Guava Jelly
101g light vegetable oil
4 drops McCormick Red Food Coloring
GUAVA BUTTERCREAM
3 pcs egg whites
3/4c granulated sugar
1 tbsp fresh lemon juice
pinch McCormick Iodized Salt
2 btls Clara Olé Gourmet Jams Orange Guava
1 tbsp Rum or flavored liqueur
2 cups Crisco Butter Flavored Shortening
PROCEDURE:
CAKE
1. Preheat oven to 325 degrees F, line with parchment paper 2pcs – 9-inch round pans
2. Combine the dry ingredients in a large bowl.
3. Make a well at the center and add the liquid ingredients: egg yolks, juice, and vegetable oil. Mix well with a wire whisk to form a smooth thick batter.
4. Using an electric mixer with whisk attachment, mix egg whites at high speed until foamy. Add the cream of tartar, lower the speed to 8 and add the sugar in a steady stream. Whisk until stiff but not dry.
5. Fold the egg whites into the thick batter in 3 batches.
6. Transfer to the pans and bake for 30-35 minutes or until springy.
7. Remove from the oven and immediately turn over a cooling rack to detach from the pan. Peel off the paper and allow to cool
Variations: can use other Clara Olé Jams like Mango, Blueberry, Strawberry and Pineapple
BUTTERCREAM
1. Combine the egg whites, sugar, lemon juice and salt in a bowl. Heat over a double boiler whisking to prevent over cooking. Heat completely checking with your finger.
2. Remove the bowl from the heat and transfer to a mixer with a whisk attachment. Whisk until the mixture is foamy. Add Clara Olé Gourmet Jam Orange Guava and continue whisking until the mixture is completely cool
3. Add Crisco Butter Flavored Shortening a little at a time until the mixture starts to thicken, continue until creamy and spreading consistency. Add the rum of liqueur
