Ingredients:
Dough:
360g unsalted butter, cubed and chilled
190g powdered sugar
90g cashew flour
2pcs eggs
750g all purpose flour
Cashew Filling:
100g butter
125g white sugar
100g cashew, ground
2pcs egg
25ml all purpose cream
Cashew nuts, roasted as needed
Pineapple Diced:
1 cup fresh pineapple, diced
2Tbsp lime juice
Coulis:
1 cup Clara Olé Pineapple Mango Jam
4Tbsp Hot Water
Topping:
1 cup fresh ripe mango, diced
cream, whipped as needed
Procedure:
Cashew Filling:
1. In a mixing bowl, combine egg, butter and white sugar.
2. Using a spatula, mix until white sugar is dissolved.
3. Add ground cashew and fold in all purpose cream. Be sure not to over mix.
Dough:
1. Place all ingredients in a bowl of a mixer. Keeping everything chilled.
2. Mix until crumbly and remove dough from mixer.
3. Form into a smooth ball. Flour hands if needed.
4. Roll dough out on a clean surface and mold into a baking dish.
5. Pour in cashew filling and bake for 12 minutes at 350 degrees Fahrenheit.
Pineapple Diced:
1. Mix both ingredients and set aside.
Coulis:
1. Mix hot water and Clara Ole Pineapple Mango Jam and set aside.
Assembly:
1. Once base has been baked, add pineapple diced and coulis on top.
2. Garnish with whipped cream and fresh ripe mango.
3. Serve.
