Ube Rice Crackers with Salted Egg Cheese Sauce

Ube infused rice crackers served with Mango Lemongrass dip, Salted egg and cheese dip, and white chocolate ube glaze

Ingredients

  • Ube Rice Crackers

  • Mango Lemongrass

  • Salted Egg and Cheese Sauce

  • White Chocolate Glaze

Ube Rice Crackers

Combine all ingredients and knead until smooth.
Rest for 5 minutes before portioning

Mango Lemongrass Filling

Combine the rice, water, ube flavor, salt, and coconut milk in a pot and cook until
all the liquid is absorbed by the rice
Spread the cooked ube rice in a tray lined with parchment paper
Dehydrate in 130C preheated oven for 1 hour and 30 mins.

Salted Egg and Cheese Sauce

Saute the onion and garlic in margarine.
Add the crushed Kaffir Lime Leaves and saute until aromatic.
Add the salted egg yolk, cheese sauce, water, and coconut milk and simmer until thick.
Season with pepper.

White Chocolate Glaze

Melt the chocolate over double boiler. Add the warm cream and ube flavoring.
Season with a pinch of salt.
