80g Sagay Muscovado Brown Sugar

30ml Cold water

Coconut Banana Base

500ml Coconut Water

60g Condensed milk

60g Thai kitchen coconut milk

45g Sagay Muscovado Brown Sugar

150g Green Bananas
-
250g Young coconut strings

150g Otap Biscuits

TreeTop Apple Jelly StringsBloom gelatin in water. Let it sit for 5 mins or until set. Set aside. |

In a pot, heat Treetop Apple Juice and Sagay Muscovado Sugar. Mix until sugar has dissolved. |

Add in the bloomed gelatin. Stir until the gelatin dissolves. |

Transfer to a long rectangular container, cool down, and cover. |

Chill the Apple jelly until set. |

When set, use a coconut meat scraper and scrape the apple jelly into long strands. Set aside. |

Coconut Banana BaseBlend coconut water, condensed milk, Thai Kitchen Coconut Milk, Sagay Muscovado Sugar and bananas until it foams up. |

Set aside. |

To AssembleIn a glass, layer ice, TreeTop Apple strings, coconut strings and crushed Otap biscuits. |

Repeat until you fill up the glass. |

Top with coconut banana foam, more apple jelly strings and piece of Otap. |
